It really confuses me as to why Luke is so un-likeable by Emily or any other person of her social class. | You shouldn't forget that Emily figured out that there's something going on between Luke and Lorelai from Season 1 on, she pointed it out numerous times before they got together - just to ask Lorelai "What the hell she had been thinking" and trying to break-up Lorelai and Luke in 5x12/5x13.
It's nothing "we" make up, it's just that the show and Emily's reactions in it proved that - despite the fact she knew that Lorelai and Luke were attracted by each other/in love with each other - romantic feelings apparently weren't enough in her eyes to warrant a serious relationship or even a marriage.
Still, she accepted it when she saw that Lorelai was going to marry Luke no matter what. And she will again, probably/eventually she will like him because he's a "good" man. But it's very unlikely that she'll love Luke over night and think he and Lorelai should be together just because of 7x13, that'd simply be out of character, ridiculing the way Emily had been portrayed seven years long.
